Zuara Sushi - A Michelin Star restaurant

@zuarasushi is one of the few exquisite @michelinguide starred gastronomic experiences that Madrid has to offer.

From the outside one may easily miss this abode of world class sushi because of its simple and understated entrance. Walking in there is a sense of natural calm and a Zen temple like atmosphere. We are walked to our seat by an incredible team of hosts led by the world renowned sommelier @prietoalvaro.


One who is used to observing can easily notice how well appointed every little aspect of this abode is. From the wine glasses on the shelf, to the cutlery on the table, the chairs and even the chopsticks. The kitchen is impeccably clean, organized and minimal inspired by the traditional Japanese sense of aesthetics.

The show begins and chefs led by the world renowned sushi master Chef David @david_arauz_velez take center stage. It is a show indeed, not like a movie but more like a play.

The superbly talented Chef Carlos @unacanilla prepares each sushi for us and explains to us what it takes to make world class sushis. It is LOVE he says. Aging the fish for several days is a common technique used at this level of cooking.

Zuara sushi works on the omakase concept where the chef brings to the guest the best of seasonal selections of food, piece by piece. Although the popular belief is fish is the main aspect of sushi it is not! The rice is and it takes chefs years of learning to not only cook the perfect rice but also to serve the rice at an optimum temperature. Time and temperature plays a big role in making and eating the finest of sushis. 



Even when there is a tiny morsel of food on the table it is carefully removed and the table is cleaned by the impeccably attentive hosts. We not only ate but learned what it takes to put the best sushi on the table. The skills, the attention and the focus it takes for years to perfect this craft is incredible. 
After this it will be and it is hard to appreciate sushi that we have tried in other parts of the world.


When visiting Spain this abode of world class sushi is a must visit for any gourmand.
